  • 1 cup all-purpose flour
  • 1 teaspoon baking powder

  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 2 large eggs

  • 1/2 cup chopped candied ginger (optional)
  • 1/2 cup chopped dark chocolate or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan and line it with parchment paper for easy removal.
  2. In a medium bowl, combine the flour, baking powder, cinnamon, nutmeg, and salt. Mix well and set aside.
  3. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract and orange juice until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the mixed dried fruit, chopped nuts, and optional ingredients like candied ginger or chocolate, if using.
  7. Pour the batter into the prepared baking pan and spread it evenly.
  8. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bars to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
  10. Once cooled, cut into squares or bars and serve.
