- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup orange juice
- 1/2 cup chopped candied ginger (optional)
- 1/2 cup chopped dark chocolate or chocolate chips (optional)
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan and line it with parchment paper for easy removal.
- In a medium bowl, combine the flour, baking powder, cinnamon, nutmeg, and salt. Mix well and set aside.
- In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract and orange juice until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the mixed dried fruit, chopped nuts, and optional ingredients like candied ginger or chocolate, if using.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bars to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
- Once cooled, cut into squares or bars and serve.
