A delightful and indulgent dessert combining the flavors of bananas foster with creamy banana pudding.

  • 2 ripe bananas, sliced
  • 1 cup brown sugar
  • 1/2 cup unsalted butter
  • 1/4 cup dark rum (optional)
  • 1 teaspoon vanilla extract
  • 1 (5-ounce) package instant vanilla pudding mix
  • 2 cups cold milk
  • 1 (8-ounce) container whipped topping
  • 1 (12-ounce) box vanilla wafers
  • 1/2 teaspoon ground cinnamon
  • Chopped pecans or walnuts for garnish (optional)

Instructions

  1. In a medium saucepan over medium heat, melt the butter. Stir in the brown sugar and cook until the mixture is bubbly and slightly thickened, about 2-3 minutes. If using, carefully add the dark rum and allow it to cook for an additional minute. Remove from heat and stir in the vanilla extract. Set aside to cool slightly.
  2. In a large mixing bowl, whisk together the instant vanilla pudding mix and cold milk until well combined. Let it sit for about 5 minutes to thicken.
  3. Gently fold in the whipped topping into the pudding mixture until smooth and creamy.
  4. In a 9×13 inch baking dish, layer half of the vanilla wafers on the bottom. Top with half of the sliced bananas, followed by half of the pudding mixture. Drizzle half of the warm bananas foster sauce over the pudding layer.
  5. Repeat the layers with the remaining vanilla wafers, bananas, pudding mixture, and finish with the remaining bananas foster sauce on top.
  6. Sprinkle ground cinnamon over the top and garnish with chopped pecans or walnuts if desired.
  7. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results, to allow the flavors to meld and the pudding to set.

Notes

  • For a non-alcoholic version, omit the rum and replace it with an additional tablespoon of vanilla extract.
  • Add a layer of chocolate pudding for a chocolate banana pudding twist, or use chocolate wafers instead of vanilla for a different flavor profile.
