2 pounds pork shoulder, trimmed and cut into large chunks
1/2 cup fresh orange juice
1/4 cup fresh lime juice
1/4 cup olive oil
1 tablespoon minced garlic (about 4 cloves)
1 tablespoon ground cumin
1 tablespoon dried oregano
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon crushed red pepper flakes (optional)
1/4 cup chopped fresh cilantro (for garnish)
Instructions
In a large bowl, whisk together the orange juice, lime juice, olive oil, minced garlic, cumin, oregano, salt, black pepper, and crushed red pepper flakes (if using).
Add the pork shoulder chunks to the marinade, ensuring they are well coated. Cover and refrigerate for at least 4 hours, preferably overnight for maximum flavor.
Preheat your oven to 300°F (150°C).
Remove the pork from the marinade and place it in a roasting pan. Reserve the marinade for later.
Roast the pork in the preheated oven for about 3 to 4 hours, basting with the reserved marinade every hour, until the meat is tender and easily shreds with a fork.
Once cooked, remove the pork from the oven and let it rest for 15 minutes before shredding.
Serve the shredded pork garnished with chopped cilantro.
Notes
For a spicier kick, add a diced jalapeño to the marinade.
Serve the pork with traditional sides like black beans and rice or on a Cuban sandwich for a delicious twist.
