A delicious and healthy crustless quiche made with zucchini, tomatoes, and cheese, perfect for any meal.

  • 4 medium zucchinis, grated
  • 1 medium onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • 1 cup cottage cheese
  • 4 large eggs
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch pie dish with olive oil.
  2. In a large skillet over medium heat, add the olive oil and sauté the chopped onion until translucent, about 5 minutes. Add the grated zucchini and cook for an additional 5 minutes, stirring occasionally, until the zucchini is tender. Remove from heat and let cool slightly.
  3. In a large mixing bowl, combine the sautéed zucchini and onion mixture with the cherry tomatoes, mozzarella cheese, cottage cheese, eggs, dried basil, salt, black pepper, and garlic powder. Mix well until all ingredients are evenly combined.
  4. Pour the mixture into the prepared pie dish and spread it out evenly. Sprinkle the grated Parmesan cheese on top.
  5. Bake in the preheated oven for 30-35 minutes, or until the quiche is set in the center and lightly golden on top. Let it cool for 5-10 minutes before slicing.

Notes

  • For added flavor, mix in some fresh herbs like parsley or chives, or add cooked bacon or sausage for a heartier quiche.
  • Substitute the zucchini with other vegetables like spinach, bell peppers, or mushrooms for a different twist.
