- 2 cups fresh blueberries (or frozen, thawed)
- 1 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/2 cup milk
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- Powdered sugar for dusting (optional)
- Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish with cooking spray or butter.
- In a large mixing bowl, combine the blueberries, granulated sugar, flour, and salt. Gently toss to coat the blueberries evenly.
- In a separate bowl, whisk together the eggs, milk, vanilla extract, lemon juice, and lemon zest until well combined.
- Pour the egg mixture over the blueberry mixture and stir gently until everything is combined.
- Pour the combined mixture into the prepared pie dish and spread it evenly.
- Bake in the preheated oven for 45-50 minutes, or until the pie is set and lightly golden on top.
- Remove from the oven and let it cool for at least 15 minutes before slicing. Dust with powdered sugar if desired.
Notes
- For a richer flavor, substitute half of the milk with heavy cream.
