A delicious and guilt-free crustless blueberry pie that is easy to make and perfect for any occasion.

Ingredients

  • 2 cups fresh blueberries (or frozen, thawed)
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup milk
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish with cooking spray or butter.
  2. In a large mixing bowl, combine the blueberries, granulated sugar, flour, and salt. Gently toss to coat the blueberries evenly.
  3. In a separate bowl, whisk together the eggs, milk, vanilla extract, lemon juice, and lemon zest until well combined.
  4. Pour the egg mixture over the blueberry mixture and stir gently until everything is combined.
  5. Pour the combined mixture into the prepared pie dish and spread it evenly.
  6. Bake in the preheated oven for 45-50 minutes, or until the pie is set and lightly golden on top.
  7. Remove from the oven and let it cool for at least 15 minutes before slicing. Dust with powdered sugar if desired.

Notes

  • For a richer flavor, substitute half of the milk with heavy cream.
  • Add a pinch of cinnamon or nutmeg to the blueberry mixture for a warm spice note.
