1 pound ground beef
1 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup chopped green onions
1 large egg
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon ginger powder
1 cup pineapple chunks (fresh or canned)
1 cup teriyaki sauce
1/4 cup soy sauce
1 tablespoon sesame oil
1 tablespoon rice vinegar
Instructions
In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, green onions, egg, garlic, salt, black pepper, and ginger powder. Mix until well combined.
Form the mixture into meatballs, about 1 inch in diameter.
Place the meatballs in the crockpot.
In a separate bowl, whisk together the teriyaki sauce, soy sauce, sesame oil, and rice vinegar. Pour the sauce over the meatballs in the crockpot.
Add the pineapple chunks on top of the meatballs.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the meatballs are cooked through and tender.
Serve the meatballs over rice or noodles, garnished with additional green onions if desired.
Notes
For a spicier kick, add a teaspoon of red pepper flakes to the meatball mixture.
Substitute ground turkey or chicken for a leaner option, and adjust cooking time as needed.
