1 pound ground beef
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1/2 cup French onion soup
1/4 cup chopped fresh parsley
1 large egg
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
8 ounces Swiss cheese, sliced
1/2 cup French onion soup (for topping)
Instructions
In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, 1/2 cup French onion soup, parsley, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
Shape the mixture into a loaf and place it in the bottom of the crockpot.
Pour the remaining 1/2 cup of French onion soup over the meatloaf.
Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the meatloaf is cooked through and reaches an internal temperature of 160°F.
About 15 minutes before serving, place the Swiss cheese slices on top of the meatloaf. Cover and let the cheese melt.
Once melted, carefully remove the meatloaf from the crockpot and let it rest for 10 minutes before slicing.
Notes
For added flavor, mix in some sautéed mushrooms or bell peppers into the meat mixture.
Substitute ground turkey or chicken for a leaner option, adjusting cooking time as necessary.
