2 pounds pork tenderloin
1 cup balsamic vinegar
1/2 cup brown sugar
1/4 cup soy sauce
1 tablespoon Dijon mustard
4 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1 tablespoon olive oil
Instructions
In a bowl, whisk together the balsamic vinegar, brown sugar, soy sauce, Dijon mustard, minced garlic, salt, black pepper, and dried thyme until well combined.
Heat the olive oil in a skillet over medium-high heat. Sear the pork tenderloin on all sides until browned, about 3-4 minutes per side.
Transfer the seared pork tenderloin to the crockpot. Pour the balsamic glaze mixture over the pork, ensuring it is well coated.
Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the pork is tender and reaches an internal temperature of 145°F.
Once cooked, remove the pork from the crockpot and let it rest for 5-10 minutes before slicing. Meanwhile, you can turn the crockpot to high and let the sauce reduce for about 15 minutes if you prefer a thicker glaze.
Slice the pork tenderloin and serve drizzled with the balsamic glaze from the crockpot.
Notes
For a sweeter glaze, add an extra tablespoon of brown sugar.
For a spicy kick, include a teaspoon of red pepper flakes in the glaze mixture.
