2 to 3 pounds beef chuck roast
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon dried rosemary
4 medium carrots, peeled and cut into 2-inch pieces
4 medium potatoes, peeled and cut into quarters
1 medium onion, chopped
2 cups beef broth
2 tablespoons Worcestershire sauce
Instructions
Heat the olive oil in a large skillet over medium-high heat. Season the beef roast with salt, black pepper, garlic powder, onion powder, thyme, and rosemary. Sear the roast in the skillet for about 4-5 minutes on each side until browned.
Place the chopped onion, carrots, and potatoes in the bottom of the crockpot.
Transfer the seared roast to the crockpot on top of the vegetables.
In a bowl, mix the beef broth and Worcestershire sauce together. Pour the mixture over the roast and vegetables in the crockpot.
Cover and cook on low for 8-10 hours or on high for 4-6 hours, until the beef is tender and easily shredded with a fork.
Once cooked, remove the roast and vegetables from the crockpot. Let the roast rest for about 10 minutes before slicing. Serve with the cooking liquid as gravy.
Notes
For a richer flavor, add a splash of red wine to the broth before cooking.
You can substitute the potatoes with sweet potatoes for a different taste and added nutrition.
