1.5 pounds beef chuck roast, cut into 1-inch cubes
1 cup soy sauce
1/2 cup brown sugar
1/4 cup rice vinegar
1 tablespoon minced garlic
1 tablespoon minced ginger
1 teaspoon sesame oil
1/4 teaspoon black pepper
1 cup broccoli florets
1 cup sliced bell peppers (any color)
2 cups cooked rice (for serving)
Sesame seeds and sliced green onions (for garnish)
Instructions
In a large bowl, combine soy sauce, brown sugar, rice vinegar, minced garlic, minced ginger, sesame oil, and black pepper. Whisk until the sugar is dissolved.
Place the beef cubes in the Crock Pot and pour the teriyaki sauce over the beef. Stir to coat the meat evenly.
Cover and cook on low for 6-8 hours or high for 3-4 hours, until the beef is tender.
About 30 minutes before serving, add the broccoli florets and sliced bell peppers to the Crock Pot. Stir to combine and cover again.
Once cooked, serve the beef teriyaki over cooked rice and garnish with sesame seeds and sliced green onions.
Notes
For a thicker sauce, mix 2 tablespoons of cornstarch with 2 tablespoons of water and stir it into the sauce during the last 30 minutes of cooking.
Substitute the beef with chicken thighs or tofu for a different protein option.
