2 medium zucchinis, sliced into 1/4-inch thick rounds
1 cup all-purpose flour
2 large eggs
1 cup breadcrumbs (preferably panko for extra crunch)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Cooking spray or oil for frying
Instructions
Preheat the oven to 425°F. Line a baking sheet with parchment paper.
In a shallow bowl, place the flour. In another bowl, beat the eggs. In a third bowl, combine the breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper.
Dredge each zucchini slice in the flour, shaking off the excess. Dip it into the beaten eggs, then coat it with the breadcrumb mixture, pressing gently to adhere.
Arrange the coated zucchini rings in a single layer on the prepared baking sheet. Lightly spray or drizzle with oil to help them crisp up.
Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy.
Serve warm as a snack or appetizer.
Notes
For extra flavor, try adding grated Parmesan cheese to the breadcrumb mixture.
You can also experiment with different seasonings such as Italian herbs or cayenne pepper for a spicy kick.
