4 cups romaine lettuce, chopped
1 pound salmon fillet
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
1 cup croutons
½ cup Caesar dressing
¼ cup grated Parmesan cheese
1 lemon, cut into wedges
Instructions
Preheat the oven to 400°F. Line a baking sheet with parchment paper.
Place the salmon fillet on the prepared baking sheet. Drizzle with olive oil and season with garlic powder, paprika, salt, and pepper.
Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
While the salmon is baking, prepare the salad by combining the chopped romaine lettuce, croutons, and Caesar dressing in a large bowl. Toss until well coated.
Once the salmon is done, remove it from the oven and let it cool for a few minutes. Flake the salmon into large pieces and gently fold it into the salad.
Serve the salad topped with grated Parmesan cheese and lemon wedges on the side.
Notes
For a lighter version, use a yogurt-based Caesar dressing instead of traditional dressing.
You can also add cherry tomatoes or avocado for extra flavor and nutrition.
