Crispy Reuben Roll-Ups are a must-try delight, combining the classic flavors of a Reuben sandwich in a crispy, bite-sized form.

Ingredients

  • 8 ounces corned beef, sliced thin
  • 8 ounces Swiss cheese, sliced
  • 1 cup sauerkraut, drained and rinsed
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 large egg
  • 1 tablespoon water
  • 1 cup almond flour
  • 1/2 cup shredded Parmesan cheese
  • Cooking spray or olive oil for frying

Instructions

  1. In a medium bowl, combine the mayonnaise, Dijon mustard, garlic powder, onion powder, and black pepper. Mix well and set aside.
  2. Lay out slices of corned beef on a clean surface. Place a slice of Swiss cheese on top of each slice of corned beef.
  3. Add a spoonful of sauerkraut on top of the cheese, then drizzle a little of the mayonnaise mixture over the sauerkraut.
  4. Carefully roll up each slice of corned beef tightly, starting from one end and rolling to the other. Secure with a toothpick if necessary.
  5. In a shallow bowl, whisk together the egg and water. In another bowl, combine almond flour, Parmesan cheese, and paprika.
  6. Dip each roll-up into the egg mixture, then coat with the almond flour mixture, pressing gently to adhere.
  7. Heat a large skillet over medium heat and add cooking spray or olive oil. Once hot, place the roll-ups in the skillet, seam side down.
  8. Cook for about 3-4 minutes on each side, or until golden brown and crispy. Remove from the skillet and let cool slightly before serving.

Notes

  • For a spicier kick, add a few dashes of hot sauce to the mayonnaise mixture.
  • Substitute turkey or chicken for the corned beef for a lighter version of this dish.
