Crispy Parmesan Garlic Chicken Burritos are a delicious and satisfying meal, featuring a flavorful chicken and cheese filling wrapped in crispy tortillas.

  • 2 cups cooked chicken, shredded
  • 1 cup cooked rice
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sour cream
  • 2 tablespoons mayonnaise
  • 2 tablespoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large flour tortillas
  • 1 cup panko breadcrumbs
  • 1/4 cup olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the shredded chicken, cooked rice, mozzarella cheese, Parmesan cheese, sour cream, mayonnaise, garlic powder, onion powder, paprika, salt, and black pepper. Mix until well combined.
  3. Place a tortilla on a flat surface and spoon about 1/2 cup of the chicken mixture onto the center. Fold in the sides and roll it up tightly from the bottom. Repeat with the remaining tortillas and filling.
  4. In a shallow dish, place the panko breadcrumbs. Roll each burrito in the breadcrumbs until fully coated.
  5. Place the coated burritos seam-side down on the prepared baking sheet. Drizzle with olive oil.
  6. Bake in the preheated oven for 20-25 minutes or until the burritos are golden brown and crispy.
  7. Allow to cool for a few minutes before serving.

  • For a spicier kick, add diced jalapeños or a dash of hot sauce to the chicken mixture.
  • For a vegetarian option, substitute the chicken with black beans and add extra veggies like bell peppers or corn.
