2 cups cooked chicken, shredded
1 cup cooked rice
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/4 cup sour cream
2 tablespoons mayonnaise
2 tablespoons garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
4 large flour tortillas
1 cup panko breadcrumbs
1/4 cup olive oil
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, combine the shredded chicken, cooked rice, mozzarella cheese, Parmesan cheese, sour cream, mayonnaise, garlic powder, onion powder, paprika, salt, and black pepper. Mix until well combined.
Place a tortilla on a flat surface and spoon about 1/2 cup of the chicken mixture onto the center. Fold in the sides and roll it up tightly from the bottom. Repeat with the remaining tortillas and filling.
In a shallow dish, place the panko breadcrumbs. Roll each burrito in the breadcrumbs until fully coated.
Place the coated burritos seam-side down on the prepared baking sheet. Drizzle with olive oil.
Bake in the preheated oven for 20-25 minutes or until the burritos are golden brown and crispy.
Allow to cool for a few minutes before serving.
Notes
For a spicier kick, add diced jalapeños or a dash of hot sauce to the chicken mixture.
For a vegetarian option, substitute the chicken with black beans and add extra veggies like bell peppers or corn.
