- 2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 large eggs, beaten
- 1 cup cornstarch
- Vegetable oil, for frying
- 1 cup orange juice
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 cup granulated sugar
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- 1 teaspoon sesame oil
- 1 teaspoon grated ginger
- 1 teaspoon minced garlic
- 1/4 teaspoon red pepper flakes (optional)
- In a large bowl, combine flour, salt, pepper, garlic powder, and onion powder.
- In another bowl, beat the eggs.
- Place cornstarch in a third bowl.
- Dip each piece of chicken first into the flour mixture, then into the beaten eggs, and finally coat with cornstarch.
- In a large skillet or deep fryer, heat vegetable oil over medium-high heat until hot (about 350°F).
- Fry the chicken in batches until golden brown and cooked through, about 5-7 minutes per batch. Remove and drain on paper towels.
- In a saucepan over medium heat, combine orange juice, soy sauce, rice vinegar, and sugar. Bring to a simmer.
- Stir in the cornstarch mixture and cook until the sauce thickens, about 2-3 minutes.
- Add sesame oil, ginger, garlic, and red pepper flakes, if using.
- Toss the fried chicken in the orange sauce until well coated.
- Serve immediately over steamed rice or with stir-fried vegetables.
Notes
- For a lighter version, use chicken breast instead of thighs and bake the chicken at 400°F for 20-25 minutes instead of frying.
