  • 1 cup plain Greek yogurt
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup breadcrumbs (preferably panko)
  • 1/2 cup grated Parmesan cheese
  • Cooking spray or olive oil for baking

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper and lightly spray with cooking spray or brush with olive oil.
  2. In a large bowl, combine Greek yogurt, lemon juice, minced garlic, oregano, thyme, paprika, salt, and black pepper. Mix well.
  3. Add the chicken tenders to the yogurt mixture, ensuring they are fully coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
  4. In a separate bowl, mix together the breadcrumbs and grated Parmesan cheese.
  5. Remove the chicken tenders from the marinade, allowing excess to drip off. Dredge each tender in the breadcrumb mixture, pressing lightly to adhere.
  6. Place the coated chicken tenders on the prepared baking sheet. Lightly spray the tops with cooking spray or drizzle with olive oil.
  7. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the coating is golden brown and crispy.
