A refreshing and crunchy salad featuring cucumbers, cherry tomatoes, corn, and a creamy ranch dressing, perfect for summer gatherings.

  • 2 large cucumbers, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1/2 red onion, finely chopped
  • 1 cup shredded cheddar cheese
  • 1 cup ranch dressing
  • 1/4 cup fresh dill, chopped (or 1 tablespoon dried dill)
  • Salt and pepper to taste
  • 1/2 cup crispy bacon bits (optional)

Instructions

  1. In a large mixing bowl, combine the diced cucumbers, cherry tomatoes, corn, red onion, and shredded cheddar cheese.
  2. In a separate small bowl, mix together the ranch dressing and chopped dill. If using dried dill, add it directly to the dressing.
  3. Pour the ranch dressing mixture over the salad ingredients and gently toss until everything is well coated.
  4. Season with salt and pepper to taste. If desired, fold in the crispy bacon bits for added flavor and crunch.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

Notes

  • For a lighter version, substitute Greek yogurt for half of the ranch dressing.
