- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1 cup mixed dried fruits (such as raisins, cranberries, and apricots)
- 1/2 cup chopped nuts (such as walnuts or pecans)
- Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking pan.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the rolled oats, dried fruits, and chopped nuts until evenly distributed.
- Spread the mixture evenly in the prepared baking pan.
- Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
- Once cooled, cut into squares and serve.
Notes
