Crisp Chewy Fruity Cookie Squares that Delight Every Bite!

Ingredients

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 cup mixed dried fruits (such as raisins, cranberries, and apricots)
  • 1/2 cup chopped nuts (such as walnuts or pecans)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the rolled oats, dried fruits, and chopped nuts until evenly distributed.
  7. Spread the mixture evenly in the prepared baking pan.
  8. Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  9. Allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
  10. Once cooled, cut into squares and serve.

Notes

  • For a chewier texture, try adding an extra egg yolk.
  • You can substitute the mixed dried fruits with chocolate chips or coconut flakes for a different flavor profile.
