In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with garlic powder, onion powder, salt, and pepper. Add the chicken to the skillet and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the chopped spinach and sauté for 2-3 minutes until wilted.
Lower the heat and stir in the heavy cream, chicken broth, Dijon mustard, and crushed red pepper flakes (if using). Bring to a gentle simmer.
Add the shredded white cheddar cheese to the skillet, stirring until melted and creamy.
