A delicious and creamy Tuscan chicken recipe that combines tender chicken breasts with a rich sauce of heavy cream, Parmesan cheese, and fresh vegetables.

  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon fresh basil, chopped (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
  3. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  5. Add cherry tomatoes and cook for 2-3 minutes until they start to soften.
  6. Stir in the spinach and cook until wilted.
  7. Reduce the heat to low and pour in the heavy cream, stirring to combine.
  8. Add the Parmesan cheese and mix until melted and creamy.
  9. Return the chicken to the skillet and coat it with the sauce. Cook for an additional 2-3 minutes to heat through.
  10. Garnish with fresh basil if desired and serve immediately.

Notes

  • For added flavor, marinate the chicken in Italian dressing for 30 minutes before cooking.
  • Substitute the spinach with kale or arugula for a different taste and texture.
