  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, fresh
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 12 ounces penne pasta
  • 1/2 cup grated Parmesan cheese
  • Fresh basil, for garnish (optional)

Instructions

  1. Set the Instant Pot to sauté mode. Add olive oil and let it heat up.
  2. Season the chicken pieces with salt and pepper. Add them to the pot and cook for about 5 minutes, stirring occasionally, until browned.
  3. Add minced garlic and Italian seasoning to the pot, cooking for an additional 1 minute until fragrant.
  4. Stir in cherry tomatoes and spinach, cooking until the spinach wilts, about 2 minutes.
  5. Pour in the heavy cream and chicken broth, then add the penne pasta. Stir to combine.
  6. Close the lid of the Instant Pot and set the valve to sealing. Cook on high pressure for 8 minutes.
  7. Once the cooking time is complete, carefully perform a quick release of the pressure.
  8. Open the lid and stir in the grated Parmesan cheese until melted and creamy.
  9. Serve hot, garnished with fresh basil if desired.

Notes

  • For a lighter version, substitute heavy cream with half-and-half or a plant-based cream.
