2 cups cooked chicken, shredded
1 cup cottage cheese
1 cup spinach, chopped
1 cup cherry tomatoes, halved
1/2 cup mozzarella cheese, shredded
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1 tablespoon fresh basil, chopped (optional for garnish)
Instructions
Preheat the oven to 375°F (190°C).
In a large mixing bowl, combine the shredded chicken, cottage cheese, chopped spinach, cherry tomatoes, mozzarella cheese, Parmesan cheese, minced garlic, Italian seasoning, salt, and black pepper. Mix until well combined.
Drizzle the olive oil into a baking dish (approximately 9×13 inches) to lightly coat the bottom.
Pour the chicken and cheese mixture into the prepared baking dish, spreading it evenly.
Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
Remove from the oven and let it cool for 5 minutes before serving. Garnish with fresh basil if desired.
Notes
For a spicier version, add red pepper flakes to the mixture.
Substitute the spinach with kale or arugula for a different flavor profile.
