2 sheets of frozen puff pastry, thawed
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
8 ounces mushrooms, sliced
4 cups fresh spinach, chopped
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon nutmeg
1 egg, beaten (for egg wash)
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
Add the minced garlic and sliced mushrooms to the skillet. Cook until the mushrooms are tender and any liquid has evaporated, about 5-7 minutes.
Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let the mixture cool slightly.
In a bowl, combine the ricotta cheese, shredded mozzarella, salt, black pepper, and nutmeg. Add the cooled spinach and mushroom mixture, stirring until well combined.
Roll out each sheet of puff pastry on a lightly floured surface to smooth out creases. Cut each sheet into 4 squares.
Place a generous spoonful of the filling in the center of each pastry square. Fold the corners over to create a pocket and seal the edges with a fork.
Brush the tops of the pastries with the beaten egg to give them a golden color when baked.
Place the filled pastries on the prepared baking sheet and bake for 20-25 minutes, or until golden brown and puffed.
Allow to cool for a few minutes before serving.
Notes
For a vegetarian option, add diced bell peppers or zucchini to the filling.
For a spicier kick, incorporate red pepper flakes or a dash of hot sauce into the filling mixture.
