Creamy Spinach & Mushroom Puff Pastry is a delightful dish that combines the richness of ricotta and mozzarella cheeses with fresh spinach and mushrooms, all encased in flaky puff pastry.

  • 2 sheets of frozen puff pastry, thawed
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sliced mushrooms to the skillet. Cook until the mushrooms are tender and any liquid has evaporated, about 5-7 minutes.
  4. Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let the mixture cool slightly.
  5. In a bowl, combine the ricotta cheese, shredded mozzarella, salt, black pepper, and nutmeg. Add the cooled spinach and mushroom mixture, stirring until well combined.
  6. Roll out each sheet of puff pastry on a lightly floured surface to smooth out creases. Cut each sheet into 4 squares.
  7. Place a generous spoonful of the filling in the center of each pastry square. Fold the corners over to create a pocket and seal the edges with a fork.
  8. Brush the tops of the pastries with the beaten egg to give them a golden color when baked.
  9. Place the filled pastries on the prepared baking sheet and bake for 20-25 minutes, or until golden brown and puffed.
  10. Allow to cool for a few minutes before serving.

Notes

  • For a vegetarian option, add diced bell peppers or zucchini to the filling.
  • For a spicier kick, incorporate red pepper flakes or a dash of hot sauce into the filling mixture.
