A delicious and creamy spinach and cheese dip served with crispy chips and fresh vegetables.

Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil
  • 1 cup sliced bell peppers and cucumber for dipping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the chopped spinach, cream cheese, mozzarella cheese, sour cream, Parmesan cheese, minced garlic, onion powder, salt, black pepper, and red pepper flakes. Mix until well combined and creamy.
  3. Transfer the mixture to a baking dish and spread it evenly.
  4. Bake in the preheated oven for 20-25 minutes, or until the dip is hot and bubbly.
  5. While the dip is baking, heat the olive oil in a skillet over medium heat. Add the sliced bell peppers and cucumber, sautéing for about 5 minutes until slightly tender. Remove from heat and set aside.
  6. Once the dip is done, remove it from the oven and let it cool for a few minutes before serving with the sautéed vegetables.

Notes

  • For a twist, add cooked bacon bits or chopped artichokes to the dip for extra flavor.
  • You can also serve the dip with low-carb tortilla chips or celery sticks for a crunchy alternative.
