1 pound pork tenderloin
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 cup heavy cream
1/2 cup chicken broth
1 tablespoon Dijon mustard
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400°F (200°C).
Pat the pork tenderloin dry with paper towels. Rub the olive oil, salt, black pepper, garlic powder, and onion powder all over the tenderloin.
In an oven-safe skillet, heat the skillet over medium-high heat. Sear the pork tenderloin for about 3-4 minutes on each side until browned.
Once browned, transfer the skillet to the preheated oven and roast for 15-20 minutes or until the internal temperature reaches 145°F (63°C).
Remove the skillet from the oven and transfer the pork to a cutting board. Cover with foil and let it rest for 5-10 minutes.
In the same skillet, add the chicken broth and scrape up any browned bits from the bottom. Stir in the heavy cream and Dijon mustard, cooking over medium heat until the sauce thickens slightly, about 3-5 minutes.
Slice the pork tenderloin into medallions and return to the skillet, coating with the creamy sauce.
Serve warm, garnished with fresh parsley.
Notes
For added flavor, marinate the pork in your favorite herbs and spices for a few hours before cooking.
Substitute the heavy cream with coconut cream for a dairy-free version, and adjust the seasoning to taste.
