  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup bell peppers (red, yellow, or green), sliced
  • 1 cup white rice
  • 2 cups water
  • 1 cup fresh or frozen green beans
  • 1 batch cornbread (store-bought mix or homemade, as per package instructions)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the chicken pieces, salt, black pepper, garlic powder, onion powder, and paprika. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the sliced bell peppers and sauté for 3-4 minutes until they are tender.
  3. Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer, then return the cooked chicken to the skillet. Let it simmer for an additional 5 minutes, allowing the sauce to thicken slightly.
  4. While the chicken is simmering, prepare the rice. In a medium saucepan, combine 1 cup of rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and water is absorbed.
  5. In another pot, bring water to a boil and add the green beans. Cook for 4-5 minutes until tender-crisp, then drain.
  6. Prepare the cornbread according to package instructions or your favorite homemade recipe.
  7. Serve the creamy pepper chicken over a bed of rice, alongside the green beans, and with a slice of cornbread on the side.

Notes

  • For added flavor, stir in a tablespoon of Dijon mustard or a splash of hot sauce into the creamy sauce.
  • Substitute the chicken with shrimp or tofu for a different protein option.
