1 cup green or brown lentils, rinsed and drained
4 cups vegetable broth
1 medium onion, diced
3 cloves garlic, minced
1 medium carrot, diced
1 medium celery stalk, diced
1 teaspoon dried thyme
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup coconut milk
2 tablespoons olive oil
Fresh parsley, chopped (for garnish)
Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5 minutes, or until the vegetables are softened.
Stir in the minced garlic, dried thyme, smoked paprika, salt, and black pepper. Cook for an additional 1-2 minutes until fragrant.
Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat to low. Cover and simmer for 25-30 minutes, or until the lentils are tender.
Once the lentils are cooked, stir in the coconut milk. Allow the mixture to simmer for another 5 minutes to heat through and thicken slightly.
Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
Notes
For added flavor, consider incorporating a splash of lemon juice or a tablespoon of soy sauce before serving.
To make it heartier, add cooked spinach or kale just before serving for extra nutrients and color.
