  • 4 cups vegetable broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 medium carrot, diced
  • 1 medium celery stalk, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup coconut milk
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5 minutes, or until the vegetables are softened.
  2. Stir in the minced garlic, dried thyme, smoked paprika, salt, and black pepper. Cook for an additional 1-2 minutes until fragrant.
  3. Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat to low. Cover and simmer for 25-30 minutes, or until the lentils are tender.
  4. Once the lentils are cooked, stir in the coconut milk. Allow the mixture to simmer for another 5 minutes to heat through and thicken slightly.
  5. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.

  • For added flavor, consider incorporating a splash of lemon juice or a tablespoon of soy sauce before serving.
