2 pounds boneless, skinless chicken breasts
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon Italian seasoning
2 tablespoons olive oil
4 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
1 cup grated Parmesan cheese
1 cup sun-dried tomatoes, chopped
1 cup fresh spinach
Fresh basil for garnish (optional)
Instructions
Season the chicken breasts with salt, pepper, and Italian seasoning.
Set the Instant Pot to the sauté function and add olive oil. Once hot, add the seasoned chicken breasts and sear for about 3-4 minutes on each side until golden brown. Remove the chicken and set aside.
In the same pot, add minced garlic and sauté for about 30 seconds until fragrant.
Pour in the chicken broth and scrape the bottom of the pot to deglaze, ensuring no browned bits stick to the bottom.
Return the chicken breasts to the pot and close the lid. Set the Instant Pot to manual high pressure for 10 minutes.
Once the cooking time is complete, allow for a natural release for 5 minutes, then perform a quick release for any remaining pressure.
Remove the chicken and set aside. Stir in the heavy cream, Parmesan cheese, and sun-dried tomatoes into the pot, mixing until smooth.
Add the spinach and return the chicken to the pot, allowing it to heat through for about 2-3 minutes.
Serve the creamy chicken mixture over pasta, rice, or on its own, garnished with fresh basil if desired.
Notes
For a lighter version, substitute half-and-half for heavy cream.
Add sliced mushrooms or bell peppers for extra vegetables and flavor.
