Creamy Garlic Shrimp on Fluffy Mashed Potatoes is a delightful dish that combines succulent shrimp in a rich garlic cream sauce served over smooth and fluffy mashed potatoes.

  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 2 pounds russet potatoes, peeled and cubed
  • ½ cup milk
  • ¼ cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Begin by boiling the cubed potatoes in a large pot of salted water for about 15-20 minutes, or until fork-tender. Drain and return to the pot.
  2. While the potatoes are cooking, melt 2 tablespoons of butter in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the shrimp to the skillet and season with paprika, salt, and pepper. Cook for 2-3 minutes on each side until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, pour in the heavy cream and bring to a simmer. Stir frequently for about 3-4 minutes until slightly thickened. Return the shrimp to the skillet and mix well to coat them in the creamy sauce. Remove from heat.
  5. For the mashed potatoes, add milk, sour cream, garlic powder, onion powder, and the remaining 2 tablespoons of butter to the drained potatoes. Mash until smooth and fluffy. Season with salt and pepper to taste.
  6. To serve, spoon a generous portion of mashed potatoes onto each plate and top with the creamy garlic shrimp. Garnish with chopped parsley.

Notes

  • For a spicy kick, add a pinch of red pepper flakes to the shrimp while cooking.
  • Substitute cauliflower for potatoes for a lower-carb version of the mashed base. Steam the cauliflower until tender and mash with the same ingredients.
