1 pound large shrimp, peeled and deveined
2 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon red pepper flakes (optional)
1 cup heavy cream
1 cup grated Parmesan cheese
1 teaspoon lemon juice
Salt and pepper to taste
8 large flour tortillas
1 cup fresh spinach leaves
1/4 cup chopped fresh parsley (for garnish)
Instructions
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
Add the shrimp to the skillet and cook for 2-3 minutes, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
In the same skillet, pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese and lemon juice, mixing until the cheese has melted and the sauce is smooth. Season with salt and pepper to taste.
Return the cooked shrimp to the skillet, coating them in the creamy sauce. Cook for an additional 2 minutes to heat through.
Lay out a tortilla and place a handful of fresh spinach in the center. Spoon a generous amount of the creamy shrimp mixture on top of the spinach.
Roll the tortilla tightly around the filling, folding in the sides as you go to create a sealed roll-up. Repeat with the remaining tortillas and filling.
Serve the roll-ups warm, garnished with chopped parsley.
Notes
For a lighter version, substitute half-and-half for the heavy cream and reduce the amount of cheese.
Add diced tomatoes or avocado to the roll-ups for extra flavor and texture.
