Creamy Crack Chicken Lasagna Bake is a delicious and creamy dish that combines tender chicken, rich cheeses, and savory flavors, all layered between lasagna noodles.

  • 1 pound boneless, skinless chicken breasts
  • 1 packet (1 ounce) ranch seasoning mix
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup cooked bacon, crumbled (about 6 slices)
  • 12 lasagna noodles, cooked and drained
  • 1 cup chicken broth
  • 1 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, add the chicken breasts and cover with chicken broth. Bring to a boil, then reduce heat and simmer until the chicken is cooked through, about 20 minutes. Remove the chicken and shred it with two forks.
  3. In the same pot, add the softened cream cheese, ranch seasoning mix, and shredded chicken. Stir until well combined and creamy.
  4. In a 9×13 inch baking dish, spread a thin layer of the chicken mixture on the bottom.
  5. Layer 4 lasagna noodles over the chicken mixture, followed by half of the remaining chicken mixture, half of the crumbled bacon, and half of the green onions. Sprinkle with half of the cheddar and mozzarella cheese.
  6. Repeat the layers with the remaining noodles, chicken mixture, bacon, green onions, and top with the remaining cheese.
  7. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  8. Let the lasagna bake cool for about 10 minutes before slicing and serving.

Notes

  • For a spicier kick, add diced jalapeños or crushed red pepper flakes to the chicken mixture.
  • Substitute the chicken with shredded rotisserie chicken for a quicker preparation time.
