Creamy Chicken Tetrazzini is a delicious comfort dish made with tender chicken, pasta, and a rich creamy sauce, topped with melted cheese.

  • 2 cups cooked chicken, shredded
  • 8 ounces spaghetti or linguine
  • 1 cup sliced mushrooms
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 3 cloves garlic, minced
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the spaghetti or linguine according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, melt the butter over medium heat. Add the onion, bell pepper, and garlic, and sauté for about 3-4 minutes until softened.
  4. Add the sliced mushrooms and cook for an additional 5 minutes until they are tender.
  5. Sprinkle the flour over the vegetable mixture and stir well to combine. Cook for 1-2 minutes.
  6. Gradually whisk in the chicken broth and heavy cream, stirring constantly until the mixture thickens, about 5 minutes.
  7. Stir in the salt, black pepper, garlic powder, onion powder, and half of the Parmesan cheese.
  8. In a large mixing bowl, combine the cooked pasta and shredded chicken. Pour the sauce over the pasta and chicken, mixing well to combine.
  9. Transfer the mixture to a greased 9×13-inch baking dish. Top with the remaining Parmesan cheese and the mozzarella cheese.
  10. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  11. Remove from the oven and let it cool for a few minutes before garnishing with chopped parsley.

Notes

  • For a lighter version, substitute half-and-half for the heavy cream.
  • You can also add cooked peas or spinach for extra vegetables and color.
  • For a twist, try using cooked shrimp instead of chicken for a seafood variation.
