2 tablespoons olive oil
1 pound boneless, skinless chicken breasts
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 cup fresh spinach, chopped
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes (optional)
Cooked pasta or rice, for serving
Instructions
In a large skillet, heat the olive oil over medium-high heat. Season the chicken breasts with salt, black pepper, and garlic powder.
Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until the chicken is cooked through and no longer pink in the center. Remove the chicken from the skillet and set aside.
In the same skillet, add the chopped spinach and sauté for 1-2 minutes until wilted.
Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Cook for 2-3 minutes until the sauce thickens slightly.
Slice the cooked chicken and return it to the skillet, coating it in the creamy sauce. Cook for an additional 2 minutes to heat through.
Serve the chicken and sauce over cooked pasta or rice.
Notes
For a lighter version, substitute half of the heavy cream with chicken broth.
Add sun-dried tomatoes or mushrooms for extra flavor and texture.
