8 ounces spaghetti
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons Cajun seasoning
2 tablespoons olive oil
1 medium onion, diced
3 cloves garlic, minced
1 red bell pepper, diced
1 cup heavy cream
1 cup chicken broth
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Cook the spaghetti according to package instructions until al dente. Drain and set aside.
In a large skillet over medium heat, add olive oil. Once hot, add the chicken pieces and sprinkle with Cajun seasoning. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the diced onion and red bell pepper. Sauté for about 3-4 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.
Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer and let cook for 3-4 minutes until slightly thickened.
Reduce the heat to low and stir in the mozzarella and Parmesan cheese until melted and creamy. Season with salt and pepper to taste.
Add the cooked chicken and spaghetti to the skillet, tossing to coat everything in the creamy sauce. Cook for an additional 2-3 minutes to heat through.
Serve immediately, garnished with chopped parsley.
Notes
For added spice, include diced jalapeños or a dash of hot sauce in the sauce.
Substitute shrimp for chicken for a delicious seafood twist, cooking them until pink and opaque before adding to the sauce.
