A delicious and creamy one-pan dish featuring beef, mushrooms, and cheese tortellini, perfect for a quick weeknight dinner.

  • 1 pound ground beef
  • 8 ounces fresh or frozen cheese tortellini
  • 8 ounces sliced mushrooms
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
  2. Add the minced garlic and sliced mushrooms to the skillet. Sauté for another 3-4 minutes until the mushrooms are tender.
  3. Increase the heat to medium-high and add the ground beef. Cook until browned and fully cooked, breaking it apart with a spatula, about 5-7 minutes. Drain any excess fat.
  4. Stir in the beef broth, heavy cream, Italian seasoning, salt, and pepper. Bring the mixture to a simmer.
  5. Add the tortellini to the skillet and cook according to package instructions, usually about 3-5 minutes, until the tortellini are tender and heated through.
  6. Stir in the grated Parmesan cheese until melted and well combined.
  7. Remove from heat and garnish with fresh parsley before serving.

Notes

  • For a lighter version, substitute ground turkey or chicken for the beef.
  • Add spinach or kale during the last few minutes of cooking for extra nutrients and color.
