A delicious and flavorful dish combining pork tenderloin with a sweet and tangy cranberry apple sauce.

Ingredients

  • 2 pork tenderloins (about 1 pound each)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup fresh or frozen cranberries
  • 1 medium apple, peeled, cored, and diced
  • 1/2 cup chicken broth
  • 1/4 cup brown sugar
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cinnamon
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat the oven to 400°F.
  2. Season the pork tenderloins with salt and black pepper.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the pork tenderloins and sear on all sides until browned, about 5 minutes.
  4. Remove the pork from the skillet and set aside. In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent, about 3 minutes.
  5. Add the cranberries, diced apple, chicken broth, brown sugar, thyme, cinnamon, and apple cider vinegar to the skillet. Stir to combine.
  6. Return the pork tenderloins to the skillet, spooning some of the cranberry-apple mixture over the top.
  7. Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the internal temperature of the pork reaches 145°F.
  8. Remove from the oven and let the pork rest for 5 minutes before slicing. Serve with the cranberry-apple sauce spooned over the top.

Notes

  • For a sweeter sauce, increase the brown sugar to 1/3 cup.
  • Substitute the apple with pears for a different flavor profile.
