1 pound flounder fillets
8 ounces lump crab meat, drained
1/2 cup breadcrumbs
1/4 cup mayonnaise
1/4 cup chopped green onions
1 tablespoon Dijon mustard
1 teaspoon Old Bay seasoning
1/2 teaspoon garlic powder
1/2 teaspoon lemon juice
Salt and pepper to taste
2 tablespoons butter, melted
Lemon wedges for serving
Instructions
Preheat the oven to 375°F.
In a mixing bowl, combine the crab meat, breadcrumbs, mayonnaise, green onions, Dijon mustard, Old Bay seasoning, garlic powder, lemon juice, salt, and pepper. Mix gently until well combined.
Lay the flounder fillets on a clean surface. Spoon an equal amount of the crab mixture onto each fillet, spreading it evenly. Roll the fillets up, starting from the thinner end, and place them seam-side down in a greased baking dish.
Drizzle the melted butter over the top of the rolled fillets.
Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
Serve warm with lemon wedges on the side.
Notes
For added flavor, try mixing in some chopped fresh herbs like parsley or dill into the crab mixture.
If you prefer a crispy topping, sprinkle additional breadcrumbs mixed with a little melted butter on top before baking.
