2 pounds pork shoulder, cut into 2-inch pieces
2 tablespoons olive oil
1 large onion, sliced
6 cloves garlic, minced
1 cup chicken broth
1 cup dry white wine
2 tablespoons soy sauce
1 tablespoon brown sugar
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
2 bay leaves
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 325°F (163°C).
In a large Dutch oven, heat the olive oil over medium-high heat. Add the pork pieces in batches, browning them on all sides. Remove the pork and set aside.
In the same pot, add the sliced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
Pour in the chicken broth and white wine, scraping the bottom of the pot to release any browned bits.
Stir in the soy sauce, brown sugar, thyme, salt, and pepper. Return the browned pork to the pot and add the bay leaves.
Bring the mixture to a simmer, then cover the pot and transfer it to the preheated oven. Braise for 2 to 2.5 hours, or until the pork is tender and easily shredded with a fork.
Remove the pot from the oven, discard the bay leaves, and let the pork rest for a few minutes. Garnish with fresh parsley before serving.
Notes
For a richer flavor, add a tablespoon of Dijon mustard to the braising liquid.
Serve over mashed potatoes or with crusty bread to soak up the delicious sauce.
