1 pound ground beef
1 medium onion, chopped
1 can (15 ounces) corn, drained
1 can (15 ounces) black beans, drained and rinsed
1 can (10.5 ounces) cream of mushroom soup
1 cup shredded cheddar cheese
1 teaspoon garlic powder
1 teaspoon chili powder
Salt and pepper to taste
1 package (2.5 pounds) frozen tater tots
Instructions
Preheat your oven to 350°F.
In a large skillet over medium heat, brown the ground beef and chopped onion until the beef is fully cooked and the onion is translucent. Drain any excess fat.
Stir in the corn, black beans, cream of mushroom soup, garlic powder, chili powder, salt, and pepper. Mix until well combined and heated through.
Spread the beef mixture evenly in a 9×13 inch baking dish.
Top with frozen tater tots in a single layer.
Sprinkle the shredded cheddar cheese over the tater tots.
Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden brown and crispy.
Let the casserole cool for a few minutes before serving.
Notes
For a spicier kick, add diced jalapeños or a dash of hot sauce to the beef mixture.
You can substitute ground turkey or chicken for the beef for a lighter option.
