  • 2 cups bowtie pasta
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 cups broccoli florets
  • 1/2 cup unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Cook the bowtie pasta according to package instructions in a large pot of salted boiling water. Add the broccoli florets to the pot during the last 2 minutes of cooking. Drain and set aside.
  2. In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in the lemon juice, lemon zest, smoked paprika, cayenne pepper (if using), salt, and pepper. Mix well to combine.
  4. Add the chicken pieces to the skillet and cook for about 5-7 minutes, or until the chicken is cooked through and no longer pink in the center.
  5. Once the chicken is cooked, add the drained pasta and broccoli to the skillet. Toss everything together until well coated with the cowboy butter sauce.
