1 pound fresh green beans, trimmed
1 pound baby potatoes, halved
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried dill
1 teaspoon ranch seasoning mix
Salt and pepper to taste
¼ cup shredded cheddar cheese (optional)
Fresh parsley for garnish (optional)
Instructions
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the halved baby potatoes and olive oil. Toss to coat evenly.
Add garlic powder, onion powder, dried dill, ranch seasoning, salt, and pepper to the potatoes. Mix well until the potatoes are evenly seasoned.
Spread the seasoned potatoes in a single layer on a baking sheet. Roast in the preheated oven for 20 minutes.
While the potatoes are roasting, prepare the green beans by rinsing and trimming the ends.
After 20 minutes, remove the baking sheet from the oven and add the green beans to the potatoes. Toss everything together to combine.
Return the baking sheet to the oven and roast for an additional 15-20 minutes, or until the potatoes are tender and the green beans are cooked but still crisp.
If desired, sprinkle shredded cheddar cheese over the vegetables during the last 5 minutes of cooking to melt.
Remove from the oven and garnish with fresh parsley before serving.
Notes
For a spicy kick, add a pinch of red pepper flakes to the seasoning mix.
Substitute the green beans with asparagus or broccoli for a different flavor and texture.
