6 large eggs
2 cups cottage cheese
1 cup shredded cheddar cheese
1 cup chopped spinach (fresh or frozen)
1/2 cup diced bell pepper
1/4 cup chopped green onions
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
1 tablespoon olive oil (for greasing the baking dish)
Instructions
Preheat your oven to 350°F. Grease a 9×13-inch baking dish with olive oil.
In a large mixing bowl, whisk together the eggs until well beaten.
Add the cottage cheese, shredded cheddar cheese, chopped spinach, diced bell pepper, green onions, garlic powder, salt, black pepper, and paprika. Mix until all ingredients are evenly combined.
Pour the egg mixture into the prepared baking dish and spread it out evenly.
Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the top is lightly golden.
Remove from the oven and let it cool for about 5 minutes before slicing into squares.

For added flavor, consider mixing in cooked bacon or sausage before baking.
