  • 4 large eggs
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh blueberries
  • 1 tablespoon honey (optional)

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, blend the cottage cheese and eggs until smooth.
  3. In a separate bowl, whisk together the cream of tartar, baking powder, and salt.
  4. Gently fold the dry ingredients into the cottage cheese mixture until just combined.
  5. Carefully fold in the blueberries and honey, if using, ensuring they are evenly distributed.
  6. Spoon the mixture onto the prepared baking sheet, forming 6 to 8 mounds.
  7. Bake for 25-30 minutes, or until the cloud bread is golden brown and set in the center.
  8. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
