1 cup cherry tomatoes, halved
1 cup spinach leaves

Instructions
Preheat your oven to 400°F.
In a medium bowl, whisk together the coconut milk, red curry paste, fish sauce, brown sugar, lime juice, garlic, and ginger until well combined.
In a baking dish, arrange the cod fillets in a single layer and season with salt and pepper.
Pour the coconut curry mixture over the cod, ensuring the fillets are well coated.
Scatter the cherry tomatoes and spinach around the cod in the baking dish.
