1 cup graham cracker crumbs
1/2 cup unsweetened shredded coconut
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
1 can (14 ounces) sweetened condensed milk
1 cup heavy cream
1 teaspoon vanilla extract
1/4 cup powdered sugar
Instructions
Preheat your oven to 350°F (175°C).
In a medium bowl, combine graham cracker crumbs, shredded coconut, granulated sugar, and melted butter. Mix until well combined.
Press the mixture firmly into the bottom of a greased 8×8-inch baking dish to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
In a separate bowl, whisk together the sweetened condensed milk, heavy cream, and vanilla extract until smooth.
Pour the cream mixture over the cooled crust and spread evenly.
Refrigerate for at least 4 hours or until set.
Once set, whip the heavy cream with powdered sugar until soft peaks form. Spread or pipe the whipped cream over the top of the bars.
Cut into squares and serve chilled.
Notes
For a chocolate twist, add 1/2 cup of mini chocolate chips to the cream mixture before pouring it over the crust.
Substitute the shredded coconut with crushed nuts for a different texture and flavor.
