2 to 3 pounds pork loin
1 can (12 ounces) Coca-Cola
1 cup barbecue sauce
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon black pepper
1 teaspoon salt
1 tablespoon olive oil
Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, mix together the Coca-Cola, barbecue sauce, soy sauce, Worcestershire sauce, garlic powder, onion powder, black pepper, and salt until well combined.
Heat the olive oil in a large skillet over medium-high heat. Sear the pork loin on all sides until browned, about 4-5 minutes per side.
Transfer the seared pork loin to a roasting pan. Pour the Coca-Cola mixture over the pork, ensuring it is well coated.
Cover the roasting pan with aluminum foil and bake in the preheated oven for 1 hour.
After 1 hour, remove the foil and continue baking for an additional 30 minutes, basting the pork with the sauce every 10 minutes.
Once cooked, remove the pork from the oven and let it rest for 10 minutes before slicing.
Serve the sliced pork with the remaining sauce drizzled on top.
Notes
For a sweeter glaze, add 1/4 cup brown sugar to the Coca-Cola mixture.
For a spicier kick, include 1 teaspoon of cayenne pepper or your favorite hot sauce in the marinade.
