3 ripe bananas, mashed
1/2 cup granulated sugar
1/4 cup brown sugar, packed
1/2 cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 1/2 cups all-purpose flour
1/2 cup chopped walnuts or pecans (optional)
1/4 cup cinnamon sugar (for topping)
Instructions
Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
In a large mixing bowl, combine the mashed bananas, granulated sugar, brown sugar, and melted butter. Mix well until smooth.
Add the eggs and vanilla extract to the banana mixture and stir until fully incorporated.
In a separate bowl, whisk together the baking soda, salt, ground cinnamon, and flour. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
If using, fold in the chopped walnuts or pecans.
Pour the batter into the prepared loaf pan and sprinkle the cinnamon sugar evenly on top.
Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
Notes
For a healthier twist, substitute half of the all-purpose flour with whole wheat flour.
Add chocolate chips or dried fruit for extra flavor and texture.
