Ingredients

Scale
  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups whipped cream (or 1 container of whipped topping)
  • 1 cup crushed peppermint candies (or candy canes)
  • 1 cup chocolate chips
  • 1/2 cup milk
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat the oven to 350°F. Cook the lasagna noodles according to package instructions until al dente. Drain and set aside to cool.
  2. In a mixing bowl, combine ricotta cheese, powdered sugar, vanilla extract, cinnamon, and nutmeg. Mix until smooth and well combined.
  3. In a separate bowl, fold the whipped cream into the ricotta mixture until fully incorporated.
  4. Spread a thin layer of the ricotta mixture on the bottom of a 9×13 inch baking dish.
  5. Place 3 lasagna noodles on top of the ricotta layer, followed by another layer of the ricotta mixture (about half of it).
  6. Sprinkle half of the crushed peppermint candies and half of the chocolate chips over the ricotta layer.
  7. Repeat the layering process: add another layer of noodles, the remaining ricotta mixture, the rest of the crushed peppermint, and chocolate chips.
  8. Top with the final layer of lasagna noodles and spread any remaining whipped cream on top.
  9. Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld and the dessert to set.
  10. Before serving, garnish with fresh mint leaves if desired.

Notes

  • For a chocolate twist, use chocolate lasagna noodles instead of regular ones.
  • Substitute crushed nuts or toasted coconut for the peppermint candies for a different flavor profile.
