1 ½ cups graham cracker crumbs
½ cup unsweetened shredded coconut
½ cup unsalted butter, melted
1 cup sweetened condensed milk
1 cup heavy cream
½ cup semi-sweet chocolate chips
2 large egg yolks
1 teaspoon vanilla extract
¼ teaspoon salt
1 cup whipped cream (for topping)
Additional shredded coconut (for garnish)
Instructions
Preheat the oven to 350°F.
In a medium bowl, combine graham cracker crumbs, shredded coconut, and melted butter. Mix until well combined.
Press the mixture firmly into the bottom of a greased 9×9-inch baking dish to form the crust.
Bake for 10 minutes, then remove from the oven and let cool.
In a saucepan over medium heat, combine sweetened condensed milk, heavy cream, chocolate chips, egg yolks, vanilla extract, and salt. Stir continuously until the chocolate chips are melted and the mixture is smooth and thickened, about 5-7 minutes.
Pour the chocolate mixture over the cooled crust and spread evenly.
Return the dish to the oven and bake for an additional 15 minutes.
Remove from the oven and allow to cool to room temperature, then refrigerate for at least 2 hours to set.
Once chilled, cut into bars and top each piece with whipped cream and a sprinkle of shredded coconut before serving.
Notes
For a richer flavor, try adding a teaspoon of instant coffee granules to the chocolate mixture.
You can substitute the semi-sweet chocolate chips with dark chocolate for a more intense chocolate flavor.
