3 ripe bananas, mashed
1/2 cup granulated sugar
1/4 cup brown sugar, packed
1/3 cup unsalted butter, melted
1 large egg, beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups all-purpose flour
1/2 cup semi-sweet chocolate chips
1/2 cup dried cherries, chopped
Instructions
Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
In a large mixing bowl, combine the mashed bananas, granulated sugar, brown sugar, melted butter, beaten egg, and vanilla extract. Mix well until smooth.
Sprinkle the baking soda and salt over the banana mixture and stir to combine.
Gradually add the flour, mixing until just incorporated. Be careful not to overmix.
Gently fold in the chocolate chips and chopped dried cherries until evenly distributed.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
For a nutty flavor, add 1/2 cup of chopped walnuts or pecans to the batter.
Substitute the dried cherries with dried cranberries or raisins for a different flavor twist.
